Oatmeal Carrot Cookies

Bowl #1: 1 cup of quick oats + 3/4 cup of flour + 1.5 tsp baking powder + 3 tsp of cinnamon + 1 tsp of ground cloves + 1/2 tsp of salt + 1 tbsp of coconut sugar. Bowl #2: 4-5 tbsp of soaked chia seeds (I added water to a bowl of chia seeds and let them soak for about an hour) + 1/2 cup of maple syrup. Bowl #3: 1 cup of grated carrots. Directions: Mix bowl #3 and bowl #2 in bowl #1! Roll large patties. Bake on a baking sheet with parchment paper at 325 for 15 minutes. This recipe is inspired by my beautiful friend, Julie-Anne. We ate these all weekend at the Victoria Yoga Conference last year!

One Pot Pea & Potato Soup

Ingredients: 1 cup split green peas, 3 medium potatoes chopped, 1/2 cup chopped carrot, 1/2 white onion diced, 4 garlic cloves minced, 2 stalks celery chopped, 1 tbsp Mrs Dash (similar to Italian seasoning), 1 tsp smoked paprika, 2 vegetable bouillon cubes, 1 tbsp miso paste, 2 dashes of cayenne pepper, 4 cups water, S&P to taste. Place all ingredients in a large pot, bring to a boil, reduce to a simmer and cover, cook 1 hour or until the peas have absorbed most of the water. Calories- 383 (per serving) Macros -76/4/20. Recipe serves 3 hearty bowls of soup. Feel free to double it! Recipe inspired by High Carb Hannah. ENJOY! ;)
