Yummy Yam & Yellow Pea Soup

This soup is one of my winter favourites! Hearty, delicious and full of greens! Ingredients: 1 large yellow onion, diced 2 tablespoons of minced fresh ginger (or more if you love ginger!!) 3 cloves of garlic, minced 2 tablespoons of curry powder (I got mine from the local Indian market) 1/2 teaspoon dry mustard (if you don't have this, don't worry!) 1/2 teaspoon ground tumeric 1/2 cayenne pepper (or fresh chilies of your choice) 1 large yam or Japanese sweet potato cut into one inch cubes 3 large carrots, chopped 8 cups of low-sodium vegetable broth 2 cups of dried yellow split peas (avoid bulk yellow split peas as they may not soften, can substitute green split peas) 1 bunch kale (or any le

Creamy Carrot Ginger Soup

Ingredients: 1 medium-sized yellow onion, diced 2 cloves of garlic, minced 4 cups of carrots, chopped 2 cups of celery, chopped 6 cups of vegetable broth (low sodium) 1/4 cup of fresh ginger, chopped 1 can of coconut milk s&p to taste Directions: In a large pot, saute the onion until soft. Next add the garlic, ginger, carrots and celery and a few dashes of salt and pepper. Stir vigorously for about 3-5 minutes. Add the vegetable broth and bring to a boil. Simmer on low for about 30 minutes. Allow to cool for 5-10 minutes. Add the coconut milk. Puree in a large blender. Add s&p to taste. Serve and enjoy!!

Mama's Chipotle Black Bean Soup

This is my NEW favourite winter soup recipe...stolen from my Mom! It's simple but so flavourful and satisfying! Here's what you'll need... 1 19 oz can of black beans (make sure it's the 19 oz!) drained and rinsed 1 medium-sized sweet onion, diced 3 stalks celery, chopped 2 large carrots, chopped 2 teaspoons of cumin 1/4 teaspoon of cayenne 1/2 teaspoon of salt 2 chipotle peppers in adobo sauce (you can buy these canned), chopped 1/2 cup - 3/4 cup of your favourite salsa 2 1/2 cups water 1 avocado, sliced 1 lime cut into wedges 1/2 cup of cooked corn A few handfuls of crushed tortilla chips Directions: Saute onion, celery and carrots in a little water. Add spices and chipotle peppers.
