It all begins with conditioning in our early childhood - when we're taught what's socially acceptable and what's not. Rainbow Tofu Scramble with Hearty Potatoes

Ingredients: 2 large russet potatoes, peeled and chopped into small cubes 1 large brick of extra firm tofu (350 grams) 1/2 red onion, finely diced 3-4 cups of chopped cremini mushrooms 1 small zucchini, diced 2 roma tomatoes, diced 3-4 handfuls of baby spinach 2-3 TBSP nutritional yeast EVOO (Extra Virgin Olive Oil), optional spices: 1-2 tsp. chili powder 1-2 tsp. cumin 1-2 tsp. paprika 1-2 tsp. dried oregano s&p to taste Your favourite hot sauce!
