Mama's Chipotle Black Bean Soup

This is my NEW favourite winter soup recipe...stolen from my Mom! It's simple but so flavourful and satisfying!

Here's what you'll need...

1 19 oz can of black beans (make sure it's the 19 oz!) drained and rinsed

1 medium-sized sweet onion, diced

3 stalks celery, chopped

2 large carrots, chopped

2 teaspoons of cumin

1/4 teaspoon of cayenne

1/2 teaspoon of salt

2 chipotle peppers in adobo sauce (you can buy these canned), chopped

1/2 cup - 3/4 cup of your favourite salsa

2 1/2 cups water

1 avocado, sliced

1 lime cut into wedges

1/2 cup of cooked corn

A few handfuls of crushed tortilla chips

Directions:

Saute onion, celery and carrots in a little water. Add spices and chipotle peppers. Add beans and water. Bring to a boil, cover and simmer for about 20 - 30 minutes.

Add salsa and puree in blender.

Pour soup into a bowl and garnish with sliced avocado, a dollop of salsa, a squeeze of lime juice, cooked corn and crushed tortilla chips.

ENJOY!!
